1 medium eggplant, diced 1/2 inch cubes
2-3 small zucchini, diced 3/4 inch cubes
2-3 small yellow crooked neck squash, diced 3/4 inch cubes
1 medium onion, chopped
3-4 garlic cloves, minced
1-2 Tablespoons Herbs de Provence (or MORE to taste)
Olive Oil
salt and pepper

Directions:
Directions:
Dice all veggies, onion as directed. Spread on baking sheet or 9" x 13" rectangular baking dish. Sprinkle Herbs de Provence, salt, pepper and minced garlic over top. Drizzle with olive oil and toss, making sure all veggies are lightly coated with oil. Bake at 350º for 20-25 minutes, occassionally tossing, until veggies are tender. More seasonings or oil can be added during cooking, if needed.
