3 C cooked rice
1 C frozen peas & carrots
2 chopped green onion
3 T soy sauce
1 T minced garlic
3 eggs, slightly beaten
1/4 C olive oil

Directions:
Directions:
In a large skillet, heat oil. Add rice, garlic, soy sauce, and peas & carrots. Stir-fry a few minutes. Create well in the center and add eggs. Cook one minute before stirring. Mix thoroughly then add onion.
