1 cup sugar
1 cup butter, softened
1 (3oz) pkg cream cheese, ,softened
1/2 tsp salt
1/2 tap almond extract
1/2 tsp vanilla
1 egg yolk
2 cups flour
(Icing)
4 egg whites
1 tsp cream of tartar
4 cups powdered sugar
1/4-1/2 tsp almond extract
2-3 tbs water
paste food color, as desired

Directions:
Directions:
1) In large bowl, combine all ingredients except flour and icing; beat until light and fluffy. Add flour; mix well. Shape dough into 3 disks. Wrap dough in plastic wrap; refrigerate 1 hour for easier handling.
2) Heat oven to 375. On well floured surface, roll out 1 disk of dough at a time to 1/8 inch thickness (keep remaining dough refrigerated.) Cut with lightly floured 2 1/2 inch round or desired shape cookie cutters. Place 1 inch apart on ungreased cookie sheets.
3) Bake at 375 for 6-10 min, until light golden brown. Immediately remove from cookie sheets. Cool 10 min.
4) In small bowl, ,beat egg whites with cream of tartar for 5-6 min or until soft peaks form. Gradually beat in powdered sugar and almond extract until icing is smooth and stiff peaks form.
5) Add 2 tbs water; stir until blended. If necessary, add additional water 1/4 tsp at a time for desired spreading consistency. Add food color; mix well. S[read or pipe icing over cooled cookies. (Keep frosting bowl covered with damp paper towels.) Let cookies stand 3 hours or until set.
