1/3 C. honey
1/4 C. lime juice (lemon juice works too)
1 T. chili powder
2 T. minced garlic or 1/2 t. garlic powder
1 lb. chicken breast or pork roast (raw)
10 flour tortillas or 12 corn tortillas
2 C. cheese
1 (28oz.) can green enchilada sauce
1 small can diced green chilies
1/2- 3/4 C. heavy cream
cooking spray

Place your meat in the crock pot. Pour half of the enchilada sauce over it and let cook on low for 4 hours or until meat is cooked through. Remove meat and shred. put back into crock pot. In a small bowl combine honey, lime juice, chili powder, garlic, and green chilies. Pour over shredded meat and cook 1 more hour. Preheat oven to 350º. Spray baking dish with cooking spray. Spoon meat into tortillas and roll up, place seam side down into baking dish. Combine cream and remaining enchilada sauce and pour over enchiladas. Sprinkle with cheese and bake until bubbles and cheese is melted.
