2 lg. yellow onions
6 lg. green bell peppers
2 med. red bell peppers
3 T olive oil
8 oz. Chicken breast strips
3 cups water
3 T cornstarch
3 T soy sauce
Optional: sliced water chestnuts, snow peas

Directions:
Directions:
Saute onions and peppers in olive oil until tender in wok. Add cubed chicken breast and steam in covered wok or skillet until fully cooked, flaky, and tender. Combine water, cornstarch, and soy sauce. Pour over vegetables and chicken mixture and cook until thick. Serve over rice or wrapped in a flour tortilla.
