2 cups flour
1/2 tsp. salt
2/3 cup shortening
5 to 7 T. water


Filling::

6 1/2 to 7 cups peeled sliced apples (Yellow delicious, Jonathan, Rome, or Macintosh work well- Not Red Delicious.

3/4 cup sugar
1 tsp. cinnamon
2 T. flour.
Lemon juice
2-3 T. Red Hot candies
2 T. boiled cider** (optional)

Crust:
Mix flour & salt
Cut in shortening until like small peas, adding water 1 or 2 tablespoons at a time, mixing lightly with a fork until all is moistened.

Form dough into 2 balls, one a little larger than the other. Roll out the larger ball to about 12" in diameter (for a 9" pie) for the bottom crust using flour as necessary to keep from sticking.
Roll crust lightly onto your rolling pin, then unroll it over the pan, centering it as you go.

Filling:
Mix together dry ingredients, then toss with apples.
Add a touch of lemon juice if apple variety is sweet.
Place apple mixture in crust. Sprinkle with 2 Tablespoons or so of Red Hot candies. Drizzle with boiled cider, if desired.

Finish by rolling top crust to 10" and placing over pie. Seal edges by pinching with your fingers.

Bake Pie at 400º. for 50 minutes, or until apples are tender.

**This is my mother-in-law Marilyn Jessup's apple pie recipe. She grew up in Michigan in fruit farming country and her baked goods are amazing! She likes to add a tablespoon or two of boiled cider to the pie before adding the top crust to give the pie a more intense apple flavor. Boiled cider is just apple cider (or apple juice) boiled down until it is like syrup. To make boiled cider for one pie, start with 1/2 cup juice.
