2 Tbs. grapeseed oil
2 Tbs. white balsamic vinegar
1 Tbs. Dijon mustard
1/2 shallot, minces (between 1-1 1/2 Tbs.)
1/2 apple, large diced
6 cups baby spinach (or any mixed greens of choice)
2 Tbl. toasted slivered almonds*
2 Tbl. currants (can substitute raisins/craisins)
2 oz crumbled goat cheese (crumbled fat free feta is good substitute)

grilled chicken sliced if you choose for topper

Directions:
Directions:
In large bowl whisk together grapeseed oil, vinegar, and mustard until emulsified
Whisk in shallots and diced apples into dressing
Add greens and toss to cover with dressing
Divide into plates and sprinkle with almonds, currants and cheese

* To toast the almonds, place them in a dry small skillet over medium to medium-high heat until the almonds begin browning and you can smell them (5-10 minutes). The beginning is slow, but once they start browning, stir often and watch then as they burn quickly
