Mozzarella en Carrozza Recipe

1 1/2 lbs. thin sliced mozzarella
12 slices of sliced bread (to be healthy use whole wheat)
18 fresh large basil leaves
8 large eggs
1 tsp salt
1/2 tsp ground black pepper
olive oil for frying
2 cups AP flour
1 cup pesto sauce

Divide half of the cheese equally among 6 bread slices
Add basil leaves on top of cheese
Add remaining cheese over basil
Cover with remaining bread slices pressing gently to form 6 sandwiches
Cut sandwiches in half (diagonally)
Whisk the eggs, salt and pepper in large bowl until well mixed
Place flour in medium bowl
Add enough oil to heavy large frying pan to about 1/2 inch up the sides
Heat oil over medium heat
Dredge the sandwiches in flour to coat lightly
Dip in egg mixture to coat completely
Place in hot oil
Cook until golden (about 3 minutes per side)
Remove and sit on paper towels to drain excess oil
Put on platter and serve with pesto
