1 cup raw rice
4 slices bacon
1 medium onion, chopped
2 1/2 cups water
1 tsp. salt
15oz. can black-eyed peas, drained

Directions:
Directions:
Fry bacon, remove from pan & crumble. Saute onion in bacon grease. Bring water to a boil. Add onion, bacon grease, salt & rice to boiling water. Cover tightly; lower temperature & simmer for 20 minutes. Add bacon & black-eyed peas. Simmer 5 more minutes. Remove from heat & let stand about 5 minutes until liquid is absorbed.
