1/2 cup minced onion or finely chopped yellow onion
1/4 to 1/2 cup finely chopped carrot & celery
1/2 cup butter
1/3 cup flour
1 tsp. dry mustard (spice)
1 tsp. paprika
1/2 tsp. sage
1/2 tsp. thyme
1/8 tsp. cayenne pepper
1 tsp. salt
1 (10 3/4oz.) can chicken broth
2 cups milk
1 (12 oz.) dark beer
3 cups finely shredded Sharp Cheddar cheese

Directions:
Directions:
In a large Dutch oven, cook onion & vegetables in butter until soft. Blend in flour & seasonings; gradually stir in broth, beer & milk. Cook over moderate heat, stirring constantly, until mixture comes to a boil & thickens. Add cheese, stirring & heating until smooth. To serve, ladle into soup cups or bowls. Garnish with chives, crumbled crisp bacon, parsley & crumbled Roquefort cheese (optional).
