1/2 stick unsalted butter (1/4/cup)
1/4 cup vegetable shortening
1/2 cup firmly packed brown sugar
1/4 cup white sugar
1 large egg
1/2 tsp baking soda, dissolved in 1 Tbs. of warm water
1/2 cup plus 2 Tbs. all purpose flour
1/2 tsp salt
1/2 tsp vanilla
1 1/2 cup old-fashioned rolled oats
1/2 c sweetened flaked coconut
1 6-oz. package semi-sweet chips
1/3 cup roasted peanuts
1/2 cup raisins

Directions:
Preheat oven to 375. Cream butter, shortening with sugars. Beat in egg, baking soda, flour, salt and vanilla. Stir in rest of ingredients. Spoon 4 " apart onto greased sheet; with fork dipped in cold water flatten and spread into rounds. Bake 8-10 minutes. Cool and keep in an airtight container at room temperature.
