1 c lukewarm water
1 pkg yeast
1 tsp honey
5 cups flour
3/4 c sugar
11/2 tsp salt
1 stick margarine
3 eggs + 1 for glaze

Directions:
Directions:
Mix water, yeast and honey in bowl.
Add 1 1/2 c flour and 1/2 c sugar.
Stir with a fork and let rise a half hour in a warm place.
In another bowl combine 21/2 cups of flour, salt and 1/4 c sugar. Add margarine to the second mixture and cut in with a knife until mixture resembles coarse meal.
At end of half hour add 2 beaten eggs to yeast mixture and stir well.
Add flour-margarine mixture to yeast mixture and work in.
If sticky add up to two more cups of flour.
Knead well on floured board until smooth and elastic.
Put in oiled bowl and cover with towel.
Put in warm place and let rise two hours or until doubled. Punch down and then knead lightly for a minute or two. Divide dough into equal parts depending on how many loaves you desire.
Braid the loaves and place in oiled pan allowing loaves to rise in a warm place for as long as possible (3 or 4 hours). The longer you let it rise the lighter the challah but be careful not to let it rise too long or it will kill the yeast.
Brush top with beaten egg and bake at 350º for 45 minutes.
