2 c. crushed pineapple - no sugar added
2 envelopes unflavored gelatin
1/4 c. boiling water
1 1/3 c. dry milk, nonfat
sweetener to taste
2 T. lemon juice
1 tsp. coconut extract
1 tsp. vanilla extract

Directions:
Directions:
Drain juice from pineapple, reserving juice. Soften gelatin in 1/4 cup pineapple juice. Add boiling water, stirring to dissolve gelatin. Let stand 1 minute. In medium bowl, mix dry milk and remaining juice. Add gelatin mixture, sweetener, lemon juices and extracts. Beat with mixer, 10 minutes, until peaks form. Fold in drained pineapple. Cover. Fluff to serve.
