Pie Crust Ingredients

1 3/4 cups flour
6 tbsp Crisco
2 tsp baking powder
1/2 tsp salt
1 tbsp sugar (more if you like)
2 eggs
4 tbsp cold water

Filling Ingredients

1/4 cup sugar
1 1/2 lbs ricotta
1 1/2 cups canned milk
4 eggs separated
1/2 tsp cinnamon
2 tsp vanilla
4 tbsp cornstarch
4 tbsp milk
1 cup cooked Rice
1/2 cups raisins or 1/2 cup crushed pineapple (if desired)

Directions:

Pie Crust
Sift Flour, baking powder, salt and sugar together.
Beat eggs and stir in cold water. Add egg mixture to flour mixture and carefully mix. Roll dough out for 10 inch pie

Pie Filling
Blend all ingredients (except egg whites) until creamy smooth. Beat egg whites and fold into mixture. Pour into an unbaked pie shell.

Bake at 450º for 10 minutes, then lower to 350º and cook for 50 minutes. Serve cold.
