Pie Crust
4-5 Graham Cracker Wafers
1/4 cup melted butter
1 tbsp lemon juice
1 tbsp sugar

Filling
16 oz cream cheese
3/4 cup sugar
3 eggs separated
2 tbsp flour
1/2 tsp salt
2/3 cup evaporated milk
1 tsp vanilla

Topping
Cherry Pie Filling (or other Fruit topping)

Crush wafers fine with rolling pin. Add butter, lemon juice & sugar, mix well. Press firmly into bottom and sides of spring form pan.

Filling
Beat cream cheese until softened. Add egg yolks, and mix well. Add sugar, flour, salt- blend. Beat in milk and vanilla (about 10 minutes with mixer). Beat egg whites until foamy. Add 1/4 cup sugar - beat until stiff. Fold carefully into mixture. Pour into pan.

Bake at 325º for 50-60 minutes. Let cool. Remove sides of pan. Top with Cherry Pie Filling or other fruit topping. Refrigerate.
