12 large potatoes
1 medium size onion
2 large stalks celery
1/2 lb bacon

Sauce
Drippings from 1/2 of the bacon
2 tbsp flour
2 tbsp sugar
1 cup vinegar diluted with 2 cups water
Salt & Pepper to taste

Directions:
Directions:
Cook potatoes unpeeled the day before and refrigerate overnight. Peel & slice potatoes, chop onions & celery very fine and add to potatoes. Cut up bacon in small pieces & brown in skillet, then add to potatoes. Pour off half of the drippings in separate bowl. Add in flour, sugar, vinegar, salt & pepper. Stir until it looks thin white sauce. Pour over potatoes and serve warm.
