Summer squash, fried
Flour
Butter
Bacon
Fried egg "over easy"
Lettuce
Tomato
Bread slices, toasted
Mayonnaise or ketchup

Directions:
Directions:
1) Cut summer squash into thin slices (1/8 to 1/4 inch thick). Dip slices in flour and fry in butter, salting and peppering to taste.
2) Fry several slices of bacon.
3) Fry one egg, "over easy," per sandwich. Yokes can be soft but should not be runny.
4) Toast two slices of bread per sandwich.
5) Assemble sandwiches so that each contains bacon, egg, squash slices, lettuce, and tomato slices. Add mayonnaise or ketchup.
