Pumpkin Roll Recipe

3 eggs
2 tsp cinnamon
1 c granulated sugar
1 tsp ginger
2/3 c pumkin
1/2 tsp nutmeg
1 tsp lemon juice
1/2 tsp salt
3/4 c flour
1 c walnuts, chopped fine
1 tsp baking powder

1 c powered sugar
3 oz cream cheese, rm temp
4 tblsp butter
1/2 tsp vanilla

Beat eggs at high speed for 5 min.; gradually beat in sugar.
Stir in pumpkin and lemon juice. Mix dry ingredients together and add into the pumpkin mix. Spread in a greased and floured jelly roll pan. Top with chopped walnuts. Bake at 375 for 15 minutes. Turn out on a dish towel sprinkled with powered sugar. Sarting at the narrow end, roll towel and cake together. Cool; unroll. To make filling, combine ingredients and beat until smooth; spread over the unrolled cake; roll again. Chill until serving time. This cake serves 8 and freezes well.
