2 C flour
2 tsp salt
2 tsp pepper
1 tsp red pepper
1 tsp creole or cajun seasoning
2 tsp baking soda
1/4 C sugar
2 eggs
1 12 oz. can cold beer or dark ale
1-2 medium onions, sliced into rings

Directions:
Directions:
In a medium bowl, slightly beat eggs. Add remaining ingredients and blend with an electric mixer. Immediately dip onion rings into batter and deep fry in a deep pan until golden brown. Remove onion rings and drain on papertowel.
