1/2 lb. dried black beans
2 qts. chicken broth, plus 2 C.
1 T. oil
2 C. onion, chopped
1 T. garlic, minced
1 T. cumin
1 t. ground coriander
1 t. chili powder
1/2 t. Cayenne pepper
1 T. corn starch
Juice of one lemon

Rinse and soak beans over night. Rinse soaked beans and put into a 3 qt. pot. Add 2 qt. of broth; simmer until beans are tender, but not breaking apart (about 1 hour). In another pot heat oil over medium heat. Add onion, garlic, cumin, coriander, chili powder, and cayenne. Saute until onions are tender, but not browned. Pour beans, with cooking liquid into pot with onions. Add last 2 C. of broth and bring to a boil. Lower heat and simmer for 30 mins. stirring occasionally. In a small bowl, mix 1 T. corn starch with 2-3 T. COLD water until smooth. Add into soup and simmer for 5-10 mins. more, until soup thickens slightly. Stir in lemon juice and serve.
