2 Can Great Northern or Navy Beans
1 Lg. onion, chopped
1 Lg. clove garlic, minced
1 stick butter
1/4 C. flour
3/4 C. chicken broth
2 C. milk
1 t. tabasco sauce
1 1/2 t chili powder
1 t. cumin
small can green chilies
salt/ pepper to taste
6 chicken breasts, cooked and shredded
1 1/2 C. Monterey jack cheese
1/2 C. sour cream (optional)

Cook onions and garlic in 2 T. butter until softened (not brown). In a large pot melt remaining butter and whisk in flour. Cook roux for 3 mins. Stir in onion and garlic, then gradually add in broth and milk; stirring constantly. Bring to a boil than simmer for 5 mins. or until thickened. Stir in remaining ingredients except for sour cream. Cook for 20 mins. Add a scoop of sour cream to your serving if you like! (it helps bring down the heat)

This is a good dish for a shower or party. You would want to double or triple the recipe though. I have also used my crock pot to make this. You do the onions and garlic and roux as above except than you add everything into the crock pot and cook it slow. It ends up a bit more soupy but just as tasty. It good for cold days, you can just put in the crock pot in the morning and come home to a hot meal in the evening. enjoy!
