Cup Olive Oil
Cup White wine vinegar
1 (2oz) jar diced pimiento, drained
3 Tbsp chopped fresh parsley
3 Tbsp minced green onion
3 Garlic cloves, minced
1 tsp sugar
tsp dried basil
tsp salt
tsp coarsely ground black pepper

1 (8oz) block Cheddar Cheese, well chilled
1 (8oz) block Cream Cheese, well chilled

Directions:
Directions:
Combine first ten ingredients in a jar or small blender; cover tightly and shake vigorously or blend.
Cut cheddar cheese in half lengthwise. Cut each half crosswise into inch slices. Repeat procedure with cream cheese. Arrange cheese alternately in a shallow baking dish or serving platter. Pour marinade over cheese. Cover and chill at least 8 hours. Serve with assorted crackers or bagel chips.
