1 whole chicken, cut into quarters (3-4 lbs)
Sea salt and fresh ground pepper
1 T. extra-virgin olive oil
2 medium yellow onions, diced small
2 T. minced and peeled ginger
1 tsp. sweet paprika
3/4 tsp. ground coriander
1 c. chopped pitted dates (4oz)
1/2 c. cilantro leaves, chopped
2 lemons, halved for serving
Hot cooked Basmati rice or Couscous

Directions:
Directions:
Season chicken with salt and pepper. In a large Dutch oven or heavy pot, heat oil over medium-high heat. Add chicken and cook until brown and crisp on all sides. Transfer chicken to a plate. Add onions to the pot,until soft about 5 minutes. Add seasonings, cook for 2 minutes. Add the chicken back to pot, and add 2 cups of water. Bring to a boil, then reduce to a simmer until chicken is done about 40-45 minutes. Transfer chicken to a clean serving plate. Increase heat to high, and boil liquid until reduced by half, 12-15 minutes. Stir in dates and cilantro; season with salt and pepper. Pour the sauce over chicken and serve.
