Red Velvet Cake Recipe

1/2 cup butter
1 1/2 cups sugar
2 eggs
1 (1 oz.) bottle red food coloring
2 Tbsp. cocoa
2 1/2 cups sifted all-purpose flour
1/2 tsp. salt
1 cup buttermilk
1 tsp. baking soda
1 Tbsp. vinegar

Preheat oven to 350.
Bring butter and eggs to room temperature. Grease and flour 2 8" or 9" cake pans.
Cream butter and sugar.
Beat in eggs, one at a time. Mix food coloring and cocoa together and add to creamed mixture. Sift flour and salt into a bowl. Add flour mixture alternately with buttermilk, beginning and ending with flour mixture. Beat until smooth. Sir in vanilla. Remove form mixer and add vinegar and baking soda. Beat by hand until smooth. Bake 30-35 minutes until cake shrinks from sides of pan and springs back when tested. Cool on wire racks.
