3 Boxes of Jiffy Cornbread mix
3 Eggs (for cornbread)
1 Cup of Milk
Non stick Spray for pan
2 Chicken Breast
2 cans of Chicken Broth
9 Eggs (for boiling)
1 Bunch of Celery
2 Bunches of Green Onions
2 Tablespoons of Sage
Salt to taste

Prepare Jiffy cornbread mix to directions; however, pull it out of the oven before it starts to brown. If you leave it in too long, your dressing will be dry. Boil Chicken breast in water with a little salt till done. Remove, cool, and tear into small pieces. Set aside.
Boil 9 Eggs till done, peel, and chop in small pieces. Set aside. Chop up Celery and Green onions in small pieces, place in medium sauce pan, cover with water, and bring to boil. Cook until celery and onions are very tender. Cut up cooked cornbread and put in large mixing bowl. With (clean) hands or large spoon crumble cornbread as fine as you can. Add chopped chicken, chopped eggs, celery & onions (water and all). Stir together till well mixed. At this point is when you need to add the chicken broth but be your own judge on whether to add both cans of broth. The broth is added to make the mixture moist. You do not want it too runny but you do not want it dry either. It should be easy to stir. The amount will depend on how dry the cornbread is when you pull it from the oven. Add Sage and Salt to taste. If you want it spicier you can add something like Tony Chachere’s Creole Season to taste. Spray large baking pan (9x13) and pour cornbread mixture into the pan. Bake at 350 Degrees for about 30 minutes. Again the time will depend on how moist your mixture is when you put it in the oven. You do not want it to get too brown or your dressing will be too dry.
