2 Tbs olive oil
2 large white onions, sliced thinly
2 Tbs brown sugar packed tightly
2 Tbs rice vinegar
2 Tbs chopped golden raisins
8 slices rustic bread
2 6-oz wedges gorgonzola (or blue cheese) slices
1/4 cup butter

Directions:
Directions:
Heat oil in large skillet, add onions on medium, cook til just beginning to turn color, about 20 minutes. Add sugar and cook until deep golden brown, 5-10 minutes more. Remove from heat and add vinegar, raisins and seasonings to taste. Cool and add cheese. Brush bread with butter or olive oil and grill or toast. Spread cheese mixture on top and serve.
