2 cups cooked rice
1 cup black eyed peas
Sausage or ham
Salt and pepper

Garnish ingredients:
chopped fresh tomatoes
finely chopped onions
parsley

Directions:
Directions:
Soak dried peas overnight in water. Drain and cover with fresh water. Cook with a piece of ham or lean sausage until tender and there's not much water left in the pan (about 2 hours at a simmer). Add the rice and season with salt and pepper to taste, then toss. Garnish with a mixture of chopped fresh tomatoes, finely chopped onions, and parsley.
