4 small sweet potatoes
2 T. extra virgin olive oil
1/2 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. black pepper
1/8 tsp. ground allspice

Directions:
Directions:
Preheat oven 500 lightly oil a shallow roasting pan or half sheet pan. Peel the potatoes & cut each lengthwise into 8 wedges. Combine the oil, cumin, salt, pepper, and allspice in large bowl and mix well. Add potatoes and toss to coat. Arrange in single layer in the pan. Place pan on a rack in the lower third of oven. Roast 15-20 min., until potatoes are well browned and crisp. Turn once.
