4 large baking Potatoes
2 cups finely diced cooked corned beef
1 14 oz can sauerkraut, rinsed and finely chopped
1/2 cup
shredded Swiss cheese
3 T. sliced green onions
1 garlic clove, minced
1 T. horseradish
1 tsp caraway seed
1 3 oz pkg cream cheese
3 T. grated Parmesan cheese

Directions:
Bake potatoes 425º for 45 minutes or until tender. Cool. In a bowl combine corned beef, sauerkraut, Swiss cheese, onions, horseradish, garlic, and caraway seed. Cut potatoes in half lengthwise. Scoop out potatoes. Mash potatoes with cream cheese. Stir in corned beef mixture. Mound potato mixture in shells. Sprinkle with Parmesan cheese and paprika.
Return to oven for 25 minutes or until heated through.
