1/2 c uncooked orzo
2 t olive oil, divided
1 c diced tomato
3/4 c sliced green onions
1/2 c crumbled feta cheese
1/2 t grated lemon rind
1 T fresh lemon juice
1/4 t salt
1/4 t black pepper
3/4 lb large shrimp, peeled and devined
1/4 c chopped fresh basil

Preheat oven to 450. Coat a 9 x 13 casserole dish with Pam. Cook the pasta in boiling water 5 minutes, omitting salt; drain. Place the pasta in a large bowl. Stir in 1 t oil and next 7 ingredients (i t oil through pepper). Place the orzo mixture in the casserole dish. Combine shrimp and basil. Arrange shrimp mixture on orzo mixture. Cover with foil. Bake at 450 for 25 minutes or until shrimp is done. Peel back foil and drizzle with 1 t oil.
