Pork Loin Roast (Cinta de Lomo)
1 clove garlic, sliced
2 medium onions, sliced
1 bay leaf
1 whole clove
1 c. hot water
2 T. Worchestershire sauce

Directions:
Directions:
Rub roast with salt and pepper. Brown in butter or oil on top of the stove. Make tiny slits in meat and insert slivers of garlic. Slice one of the onions and place on the bottom of crock pot. Place the roast on top of the onions and then add remaining ingredients to the crock pot. Cover and cook on high for one hour and then turn to low and cook an additional 7-8 hours. Serve roast with mashed potatoes and gravy. Gravy: Remove the roast and onions. Strain broth and then return to crock pot. Turn to high and add a paste made with 2 T. corn starch and 2 T. cold water. Stir until slightly thickened.
