1 can (8 oz.) pineapple chunks
1/2 c. chopped onion
2 T. shortening
1 1/4 c. water
2 c. small carrot sticks
3 chicken bouillon cubes
1/4 c. brown sugar
2 T. cornstarch 1/4 tsp. ginger
3/4 tsp. salt
1/4 c. ketchup
2 T. vinegar
1 T. soy sauce
2 c. diced cooked chicken
1 c. sliced green pepper
 

Directions:
Directions:
Drain pineapple.  Save juice and add water to make 2 1/2 cups liquid.  Sauté onion in shortening, add water, carrots and bouillon cubes.  Cover and simmer for 5 minutes.  Combine sugar, cornstarch, ginger and salt.  Add ketchup, vinegar, soy sauce; stir into vegetables and mix.  Cook until clear and thickened.  Add chicken, green pepper, and pineapple.  Cover and cook 5 minutes
