Turkey Lasagna Recipe

1/2 lb. wheat lasagna noodles
2 T. olive oil
2 cloves minced garlic
1 chopped medium onion
1 lb. ground turkey
2 1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
1 T. minced parsley
2 (6 oz.) cans tomato paste
1 1/2 c. water
2 eggs
1 pt. cottage cheese
1/2 lb. sliced mozzarella cheese
Parmesan cheese

Cook noodles in pot of salted water about 15 minutes Heat oil in skillet. Cook garlic and onions until soft. Add and cook til crumbly, turkey, salt, pepper, oregano & parsley. Add paste and water. Let simmer 5 minutes. Blend in a bowl, eggs and cottage cheese.
In 9x13" glass pan, put think layer of sauce, half of noodles, all of cottage cheese mixture and half of slice cheese. Repeat with sauce, rest of noodles, rest of sauce and cheese. Sprinkle with Parmesan cheese. Bake 10 minutes at 350. Cool 10 minutes before serving.
