1 1/2 lbs. smoked ham,
3 large potatoes,
1 large onion,
2 tbsp. butter,
2 tbsp. flour,
3 cloves garlic (minced),
1 1/4 cup milk,
Salt,
Black pepper,
1 lb. cheddar cheese (shredded)

Cut smoked ham (I said smoked not that water added crap, it has no flavor) into 1/2" pieces and set aside. Peel and thinly slice the potatoes (a food processor works great for this otherwise take your time and slice them thin) and set aside. Peel and thinly slice the onions (same note as the potatoes) and set aside. Shred the cheese and set aside.

In a large baking dish using 1/2 of each item layer ham, potatoes, onions and cheese in that order and repeat.

In a medium sauce pan melt butter. Add garlic and saute for about 3 minutes. Add salt and pepper to taste (dash of each). Add flour and stir until flour is completely moist. Pour in milk and cook until it creamy, stirring constantly. Pour over potatoes, onions, etc.

Bake covered at 350 for 1 1/4 hours or until potatoes are done.

You can also make these in a crock pot. High for 4 hours or low for 8 hours.

I usually double this recipe. These suckers are great as a left over. Nuke them for about 4 minutes and away you go.
