1 lb. extra lean ground beef
Cooking spray
1 c. frozen diced green bell pepper
1 T. chili powder
1/2 tsp. salt, divided
1 (14-0z.) pkg. refrigerated mashed potatoes (such as Simply Potatoes Country Style Mashed Potatoes)
1/2 c. (2 oz.) reduced-fat shredded Cheddar cheese
1 pkg. frozen mixed vegetables

Preheat broiler. Cook ground beef in a 10-inch large ovenproof nonstick skillet coated with cooking spray over medium-high heat until browned; stir to crumble. Drain well; return beef to pan. Add frozen bell pepper, frozen mixed vegetables, chili powder and 1/4 tsp. salt; cook 3 minutes or until thoroughly heated. Set aside. Prepare potatoes according to package directions, using remaining 1/4 tsp. salt. Spoon potatoes evenly over meat mixture. Sprinkle potatoes evenly with cheese. Broil 2 minutes or until cheese melts.
