Crust:
1/2 c softened butter
1/4 c powdered sugar
1 tsp vanilla
1 c flour

Cream Cheese filling:
8 oz cream cheese
1 1/2 c powdered sugar
1 egg
1 tsp lemon extract

Lemon Curd:
4 large egg yokes
1 T cornstarch
3/4 c sugar
3/4 c water
2 tsp. grated lemon peel
1/4 cup lemon juice
2 T butter

Crust:
Cream butter and sugar. Add vanilla. Add flour. Press dough into 8x8 pan. chill 3ominutes. Prick with a fork and bake 30 minutes at 325º. Let cool.

Cream cheese:
Beat cream cheese and sugar until smooth. Add egg and lemon extract. Beat until light and smooth. Cover and refrigerate.

Lemon Curd:
Blend egg yokes, cornstarch and sugar in a non aluminum sauce pan. Place over low heat and slowly whisk in water and lemon juice. Increase heat to medium and cook until mixture becomes thick. Remove from heat add lemon peel and butter. Cool for 10 minutes.

Assemble bars.
Spread cream cheese filling evenly over cooled shortbread crust. Spread lemon curd evenly over cream cheese. Place on center rack in the oven. Bake at 325 , 30 -40 minutes until edges start to turn light brown. Cool at room temperature. Chill 1 hour before cutting. Dust top with powdered sugar.
