sliced almonds, toasted in a dry skillet, set aside
Extra Virgin Olive Oil & a little butter
4 fish fillets (flounder is also nice, but any white fish works well)
1-2 eggs
cream/milk
white wine
parsley, chopped
1 lemon
capers

Directions:
Directions:
-toast almonds and set aside
-heat olive oil & butter in skillet, med/high heat
- salt & pepper fillets
- scramble 1 or 2 eggs in a dish with a splash of cream/milk, dip fish in, then cook 3-4 mins per side until browned. Remove to plate and cover with foil to keep warm.
- to pan add 1/2 c. White wine, reduce, then add parsley & juice of 1 lemon & some capers (1-2 tbsp), reduce a bit.
-Pour sauce over fish, top with toasted almonds.
