2-4 racks of ribs
1 large onion, finely chopped
2-3 garlic gloves, finely chopped
1 c. ketchup
1/3 c. red wine vinegar
1/3 c. brown sugar
1/4 c. worchestershire sauce
1/4 c. lemon juice
1 tsp. celery seed
2 tsp. cumin
4 tsp. chili powder

Preheat oven to 350ºF. Place ribs in roasting pan with salt & pepper. Cover with foil, cook 30-45 minutes.
Meanwhile, saute onions in a little oil until carmelized (approx. 15 mins. on med-low heat) Add garlic and saute 1 minute more. Add remaining ingredients and stir well. Cook on low heat until ribs are ready. Pour sauce over ribs, cover and return to oven for 2-3 hours.

These may also be cooked on the BBQ. Best to pre-cook in a covered pan, then slowly cook on BBQ until nearly done, brushing with sauce as to not burn it.
