Minestrone Recipe

1/4 c. Wesson oil
1 garlic clove
1 c. onion --- chopped
1 c. celery --- chopped
2 (6 oz.) can tomato paste
1 can beef broth
2 1/2 qts. water
1 c. cabbage --- chopped
1 (10 oz.) pkg. frozen peas and carrots
2 1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic
1 can red kidney beans
1 c. small macaroni

1. Heat Wesson oil and saute onion and garlic.
2. Stir in tomato paste and next 7 ingredients.
3. Bring to a boil. Reduce heat. Cover and slowly simmer for 1 hr.
4. Add other ingredients. Cook 15 minutes more.
5. Garnish individual bowls with grated Parmesan cheese.
