1 pkg. chicken breasts
1 pkg. thighs
1 can chicken broth
1 pkg. fresh mushrooms --- sliced
1 green pepper --- chopped
1 large onion --- chopped
2 cans green chillies (El Paso)
2 large cans diced tomatoes
2 tsp. garlic

Directions:
Directions:
1. Boil chicken until meat falls from the bone.
2. Saute all the ingredients except the tomatoes in butter.
3. Add tomatoes and onion and simmer for 1 hr.
4. Place shredded Monterey Jack OR Mozzarella in bottom of soup bowl and serve the stew on top of this.
