1 Potato, peeled and diced
1 Yam, peeled and diced
1 Red Bell Pepper, diced
2 Carrots, diced
1 Red Onion, sliced
1 Zucchini, sliced long wise
1 Tomato, sliced
Olive Oil, Salt and Pepper
Cup Bread Crumbs
Cup Grated Parmesan cheese

Directions:
Directions:
1. Mix together first 4 ingredients. Drizzle olive oil on Vegetables. Salt and Pepper.
2. Layer Onion. Drizzle with olive oil. Layer zucchini, drizzle with olive oil. Salt and pepper. Layer Tomato.
3. Top with Parmesan Cheese and Bread Crumbs. Drizzle with olive oil. Bake 400. for 40 minutes.
