2 chicken leg quarters, cooked, deboned and shredded. (save broth)
2 T. oil
1 onion, diced
2 cloves garlic, minced
1/2 green pepper, diced
2 c. small-grained rice
1/2 can pureed tomatoes
4 c. chicken broth
1 carrot, finely chopped
1 c. peas

Directions:
Directions:
Cook, debone, and shred meat from 2 chicken leg quarters; save broth. In paella pan, sauté oil, onion, garlic and green pepper. Add and cook rice, tomatoes, broth, carrots and peas. Bring to boil, lower heat, and cook until rice is done. Stir in chicken.
