4 medium potatoes, peeled and thinly sliced
1 onion, chopped
5 beaten eggs
1 tsp. salt

Directions:
Directions:
Fry potatoes in small fry pan until tender and remove to bowl. Saute onions until tender and remove to bowl. Mix in eggs and salt. Return to non-stick 6-7” frying pan with enough olive oil to coat the bottom. Cook on very low heat, rotating the pan so all sides cook without browning (about 10 minutes total). Place a plate over the frying pan and flip the tortilla onto the plate and slide it back into the pan to cook the other side another 7-10 minutes. Cut into wedges or cubes with toothpicks to serve.
