3 eggs
1 cups Sugar
1-cup oil
2 cups flour
1 tsp baking soda
4-5 apples (peeled & diced) (Think this comes to about 2 cups)
1-teaspoon cinnamon
-teaspoon salt
1-teaspoon vanilla
1 cups chopped walnut (I always put 2 cups)

Directions:
Directions:
Grease and flour a 9 x 13 cake pan. In a bowl, beat the eggs well. Add sugar & again mix well. Add the oil & beat until creamy. Sift the flour, baking soda, cinnamon, & salt. Mix w/egg mixture and add vanilla. Fold the apples & walnuts into the mixture. Bake. Cool Sprinkle with powdered sugar. Bake 350 degrees 45 50 minutes.
