Ingredients:  
15 oz Pickled Beets
1 small onion (diced)
1 small package lemon jello
1/4 c cider vinegar
1/2 c sugar
1 pinch salt

Directions:
Directions:
Drain beets into a mixing cup. Add vinegar to beet juice to make 1c liquid. Add sugar, & salt & bring to a boil. Pour over Jello & dissolve. Add beets. Let cool & add celery & onion.
