Directions:
Cook potatoes until done, but not overdone. Peel potatoes and place in a large bowl. Season with salt and pepper to taste and toss. While potatoes are cooking, cook bacon either by the slice or in chunks until crispy. Remove bacon from grease with a slotted spoon and drain. Remove most of the grease from the pan and add the onion and celery and saute until soft but not brown. Gently stir the onion and celery into the still warm peeled potatoes. Add mayonnaise and mustard to taste and stir. Add chopped pickles and crumbled bacon and stir. Serve at room temperature.
