6 eggs
1 cup granulated sugar
1 cups cooked rice
Pinch of salt
4 cups milk
1 tablespoon vanilla
A few dabs of butter for the top t
Cinnamon for the top

Directions:
Directions:
Beat eggs lightly in a 2 quart casserole dish. Add sugar, rice, salt, milk, and vanilla.

Put a few dabs of butter on top, and sprinkle lightly with cinnamon. Bake at 350 degrees about one hour and 15 minutes, or until a knife inserted in the center comes out clean.

Rice pudding is an important dish in old-time Swedish menus, and traditionally in the Swanson family. Growing up on Merritt Street, we'd usually have a rice pudding as part of Sunday supper (at Grandma Vera's too).

In Swedish-American homes, rice pudding is often served as part of the meal, not as dessert. It is a good way to use up leftover rice. We are including several recipes.
