For the bars:
4 eggs
1 2/3 cups sugar
1 cup cooking oil
1 16 ounce can pumpkin
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon cloves
1 teaspoon salt
1 teaspoon baking soda

Cream Cheese Icing:
1 3-ounce package cream cheese, softened
½ cup (1 cube) butter, softened
1 teaspoon vanilla
2 cups powdered sugar

Directions:

Beat the eggs lightly with the sugar. Beat in the oil and pumpkin.

Mix and add the flour, baking powder, baking soda, salt, and spices.

Spread in a greased 15 x 10” (jelly roll) pan. Bake at 350 degrees 25 – 30 minutes. Cool. Top with the icing below:

Cream Cheese Icing:
Mix the cream cheese, butter, vanilla, and sugar. Ice the bars.

This tastes especially good in the fall. I found the recipe in a magazine and changed the spices. The frosting stays best if you refrigerate the bars, covered so they don’t dry out. If you enjoy pumpkin pie, you'll probably like these.
