1 head fresh Cauliflower
2 large egg
Seasoned bread crumbs
1/4 cup Grated Locatelli cheese
salt
pepper

cooking oil, vegetable or canola

Directions:
Directions:
Steam cauliflower, in microwave or on top of the stove. Must be fork tender. Mash with fork and set aside to cool.
When cool, add salt and pepper to taste, two eggs, and then begin to add seasoned bread crumbs that have been mixed with at least a quarter cup of cheese. Stir the mix until the mixture will hold together.(almost the consistency of very fine tuna salad)
On the stove, heat the oil (about one inch deep )in a heavy ,deep sided fry pan. Spoon the mixture into the oil gently with a table spoon. Let fry up until golden brown turning once, remove and place on folds of paper towels to drain. Keep well out of the reach of anyone who may be in the house. The temptation is just tooooooo great. Hence the name.
