2 cups cold mashed potatoes
1/2 tsp salt
1 Tbsp vegetable oil
1 1/2 cups flour

Directions:
Directions:
Mix potatoes, salt, oil and 3/4 cup of the flour to make a dough. Flour a flat surface and break off chunks of dough to roll out into a thin, crepe like pancake. Bake on a dry (no oil!) griddle over medium heat, flipping once. Cool. Spread each crepe with butter and sprinkle with brown sugar. Roll up into a tight log and cut into pieces. Makes aboutr 8 pancakes.
